Kale and Ham Frittata

How many of you get to the breaking point when you cannot decide what to make for dinner? I know there is meal planning, and I’m sure many of you do that. But some days, I just don’t want to do that. I guess its laziness. Oh well! For me, when I get to this point, I want dinner to be easy and I want it to be quick. This usually means rummaging though the refrigerator to see what I’ve got on hand.

I’ve made many quiches – both with crust and without. But I might love frittatas a little bit more. These are popular dishes for a few reasons. For one, eggs are pretty cheap. Frittatas can be made with a variety of meats and or veggies, they cook fairly quickly, and can be paired with a simple arugula salad with a tangy vinaigrette. And a glass of wine! Done. Here comes dinner.

I knew I had kale on hand, a big slab of Kirkland brand ham from Costco, leftover baby bella mushrooms that HAD to be used, and a variety of cheeses. Always so many cheeses on hand. So I went to work and chopped it all up. I also used a combo of eggs and egg whites. And the best part? It was quick and delicious. This is what you will need:

Ingredients:

  • 3/4 cup chopped ham
  • 1 cup chopped kale
  • 1 1/4 cup chopped mushrooms, baby bella or white mushrooms
  • 1/3 cup shredded provolone cheese
  • 2/3 cup shredded sharp cheddar cheese
  • 4 eggs
  • 2 egg whites
  • 1 tbsp butter (salted)
  • salt and pepper to taste
  • dash of garlic powder

How To:

  • Preheat oven to 400 degrees.
  • Melt butter over medium heat in an oven-safe skillet.
  • Sauté the veggies for about 8 minutes, until soft.
  • Combine the eggs and whites, whisk to scramble together. Then mix in the cheeses and spices.
  • Pour eggs and cheese mixture over the veggies in the skillet.
  • Gently move around the eggs so it covers the veggies and skillet evenly.
  • Let edges set for about 1 minute and transfer the skillet to the oven.
  • Cook for 13 minutes; check for doneness.

I would serve this hot and fresh. You will probably want to eat more than one slice, and I’d call you lucky if you have leftovers for the next day! This makes a great cozy dinner, especially when its so cold out!
