The Garden Quiche
You guys, the Garden Quiche (ta-da)!
I especially love quiches because you can literally throw any combination of meats and/or veggies in it, and it’ll turn out delicious. Sometimes these recipes happen unplanned, and in a moment as if I were on “Chopped.” I know some of you get me! You look in the fridge and all you have are eggs, sliced cheddar, mushrooms, and precooked breakfast sausage. Sounds perfect! But this one is not that one. This one is meatless! (what?!)
I knew I wanted to make a quiche – hubby has breakfast for the morning during the week, and usually, our toddler wants to eat part of mine when he realizes he is hungry. So it’s a win-win! This one is perfect for vegetarians since the main stars are eggs, spinach, tomatoes, onion, and some feta cheese. Here is what you will need:
Preheat your oven to 375 degrees.
Ingredients:
- 1 deep dish pie crust, frozen
- 7 eggs
- 1/4 cup half and half
- a few dashes of Worcestershire sauce
- 3 tsp pepper
- 1 tsp salt
- 1 cup spinach, then chopped
- 1/3 cup onion, chopped
- 1/3 cup tomato, chopped
- 1/2 cup crumbled feta cheese
How to:
- Mix all eggs, liquids, and spices together first; makes it easier to combine veggies and cheese later.
- Throw in the veggies once chopped up, then toss in cheese.
- Mix everything together and then pour into the frozen pie shell. I sprinkle just a little more feta on top before it goes into the oven! I also stick a cookie sheet under it in case it bubbles over the side. Oven messes are the worst, am I right?!
- Bake the quiche for 35 minutes.
- Check the center with a knife, and when it’s clean, its done!
The pie shell will have beautiful golden edges, and the quiche will smell amazing. Enjoy!
